Veg Dip

  • 1 small package sour cream
  • equal amount sour cream
  • 1 T grated onion
  • 2 t beau monde
  • 2 T dill
  • parsley on top
  • turnips, cauliflower, radishes, celery, carrots, cucumeber

Provence almonds

  • 2 T extra-virgin olive oil
  • 2 t fresh thyme
  • 2 t coarse salt
  • 4 oz. blanched almonds
  • Preheat oven to 400
  • In large, shallow bowl, combine oil, thyme, and salt. Set aside.
  • Place almonds in single layer on baking sheet and toast till lightly brown 8-10 min
  • Immediately add hot nuts to oil mixture .
  • Serve warm or at room temp. Store for up to two weeks.

Prosciutto and Gruyere Pastry Pinwheels

  • 1 sheet puff pastry, thawed
  • 4 oz thinly sliced prosciutto
  • 2 T chopped basil
  • 3/4 c grated Gruyere (2.5 oz)
  • One beaten egg
  • Cut pastry sheet in half
  • Arrange half of prosciutto one one rectangle, leaving half inch border along one long side.
  • Sprinkle prosciutto with half of basil, then top with half of cheese.
  • Brush plain border with egg glaze.
  • Starting at long side opposite border, roll up pastry jelly-role style.
  • Wrap in plastic
  • Repeat.
  • Refrig until firm, at least 3 hrs.
  • 400 oven
  • Line 2 large backing sheets w/parchment
  • Cut logs crosswise into half inch thick rounds. Arrange 1 inch apart.
  • Bake one sheet at a time until golden brown, 16 min.
  • Cool

Chutney roulade

  • 1 package chilled cream cheese
  • 2/3 cup cranberry apple chutney
  • 1/2 cup thinly sliced green onions
  • Using rolling pin, flatten cream cheese between sheets of plastic wrap until 10 by 8 inch rectangle.
  • Remove top sheet and spread 1/3 cup chutney on it, leaving 1 inch border
  • Sprinkle chutney w/green onions
  • Roll up starting at long side.
  • Press remaining green onions onto roulade.
  • Wrap tightly with plastic. Refridge at least 2 hours
  • Serve w/crackers

Salsa-baked goat cheese

  • 1/4 c chopped nuts
  • 1 4-oz log goat cheese
  • 1 3-oz cream cheese, softened
  • 1 cup salsa
  • 1 T cilantro, chooped
  • 350 degree oven
  • Toast nuts, cool
  • Add cheeses to the bowl and combine.
  • Put in center of baking dis h(like pie pan) and form into 5 inch diameter disk
  • Spoon salsa over and around cheese
  • Bake 10-5 minutes
  • Sprinkle cilantro
  • Dip with tortilla chips, toasted pita, tostitos gold
